20 quick & easy meals: What to cook while you are staging your home or packing for a move

I’m going to miss my perfect cooking kitchen!

I can’t stop saying it….we’re almost moved!!! This year has been a whirlwind with making the decision to relocate, staging our home and now getting ready for our big move to New Braunfels this week.

We listed our home the first week in January and had to keep it staged, clean and tidy for two and a half months. Y’all, with a toddler!! A boy toddler. So, needless to say, finding easy meals has been a must.

We ate out more than usual, but I hate doing it too often for our health (and wallet). At home, I got a little creative on how to make things – by the last week before our move I made mostly meals in our slow cooker and used my favorite no-cleanup Slow Cooker Liners to make the job super easy. That, and frozen foods with foil in our NuWave.

Staging your home makes for a really tough season, especially with kiddos! Between staging and eventually packing for our move, we needed some go-to quick and easy meals. I’ve rounded up my top 20 dinners that are easy, healthy-ish and family approved.

Slow Cooker:

Slow Cooker Taco Meat – one of my fav recipes we make super often

Farm Rich tailgating meatballs

Shredded buffalo chicken – not so much for the kiddos, but if they like spicy it is a winner!

Spinach & Artichoke Chicken – paired with Modern Table lentil rotini

Meatloaf Parmesan

Cheesy Chicken Cauliflower Casserole – When Mi Amor BBQ’s, I always have him make extra chicken for this recipe, and the Chicken Parmesan Casserole below.

Mozzarella Steak

Crustless Pizza

Chicken & Wild Rice Casserole – the key (for me) to take this from good to amazing by swapping out the cream of chicken to cream of mushroom. Using a higher end kind makes a  huge difference, too!

 One pot / one pan:

Skillet Gnocchi with Chard & White Beans

Healthy Italian Sausage & Veggies

Balsamic Chicken & Veggies – part of the prep can be done the day before

Roasted Chickpea Gyros

Greek Chicken and Lemon Rice

Casseroles:

Million Dollar Spaghetti – one of our favorite meals. Takes a little bit of work, but feeds us for a few days so totally worth it. I substitute the beef/sausage for Italian Style Ground Turkey, and use Banza chickpea Pasta Spaghetti.

Chicken Parmesan Casserole – they key here is using easy, tasty chicken.

Pesto Broccoli Sweet Potato Rice Casserole – use riced sweet potato to make the recipe super easy.

  1. ok, I’m not going to lie.. I would miss that kitchen too!!! Its beautiful, but these meal sound amazing and just want I need because I’m too busy to cook big meals, The Greek Chicken dish is on my list…. I didnt realize you are in New Brunfels.. really close to me!! We need to get together soon! That would be so awesome!

    1. Yes, girl!! I’m moving in this week from Austin, we will definitely have to connect. And, can you believe we bought a home with a galley kitchen?! We downsized so I can stay home with my chiquito so no complaints…but man I will miss this kitchen! 😉
